A brand-new menu launches on the first day of every month. This edition of the Spring Festival arrives in two phases, featuring 13 seasonal creations starting from $13, inviting you to savor the vibrant flavors of springtime in full bloom.
• Japanese Red Seabream with Yuzu Salt Sushi ($16) Fresh, sweet Japanese red seabream is marinated with yuzu from Kochi Prefecture, delivering a refreshing citrus aroma and clean flavor that makes a perfect appetizer.
• White Shrimp with Yuzu Sauce Sushi ($14/2 pcs) Springy shrimp marinated in soy sauce and finished with fragrant yuzu peel. The citrus brightness and savory soy notes bloom beautifully on the palate.
• Marinated Makurazaki Bonito with Yuzu Sauce Sushi ($15/2 pcs) Bonito is marinated with specially selected Japanese Ryukyu soy sauce, then charcoal-grilled and straw-smoked to achieve a tender texture with delicate smokiness. Finished with sweet-tangy yuzu sauce, balancing savory umami with refreshing fruitiness.
• Slow Cooked Foie Gras Sushi ($18) Foie gras is slow-cooked at low temperature, topped with a thin layer of fine sugar and lightly torched to a golden crisp. Rich foie gras fat intertwines with aromatic sake notes, creating a luxurious yet balanced flavor that never feels heavy.
• Seared Duck Breast with Foie Gras Sushi ($14/2 pcs) Smoked duck breast is brushed with syrup and seared with sake, perfectly highlighting the creamy texture of foie gras alongside a gentle sake aroma.
• Seared Olive Flounder Muscle Sushi ($14) Richly marbled flounder fin muscle is lightly seared, allowing its abundant fat to slowly melt and release deep, savory richness.
• Toro Kama Sushi ($27) Made from a rare cut of bluefin tuna collar, featuring minimal sinew and abundant marbling for an exceptionally tender texture.
• Duo Scallop Sushi ($28) Hokkaido scallops with a plump, full texture are served in a generous double portion for an indulgent seafood experience.
Launching from April 13 — Additional Spring Festival Items:• Akagai ($33/2 pcs) Enjoy two distinctive preparations of ark shell: a whole live akagai lightly seasoned with soy sauce to showcase its natural sweetness and crisp bite, alongside akagai skirt gunkan paired with refreshing cucumber slices for layered textures and freshness.
• Grilled Beef Tongue with Grilled Green Onion Sauce Sushi ($18/2 pcs) Premium beef tongue sliced to optimal thickness is topped with a signature salted green onion sauce and flame-seared at high heat, delivering an irresistibly savory aroma.
• Grilled Salmon with Crispy Fried Leeks Sushi ($13) Salmon is charcoal-grilled at high temperature to lock in its natural richness, then finished with crispy fried leeks for added texture and fragrance.
