The third Monday of July is Japan’s Marine Day! Genki is celebrating with the limited-time Marine Month menu, featuring a refreshing lineup made with sustainably sourced summer ingredients.
Kicking things off is the Striped Jack with Yuzu Salt Sushi ($17), flown in fresh from Uwajima. Its tender, subtly sweet flavour is perfectly balanced with a hint of citrusy yuzu salt.
The Abalone Sushi ($19/2 pcs) offers a duo of rich, savoury flavours: one simmered in soy, sake, and mirin; the other glazed with a sweet Kyushu-style soy sauce.
From Hinase in Okayama, the Okayama Oyster Tempura Sushi ($13) delivers a crispy bite with golden-fried oysters that are plump, juicy, and full of umami.
