All-New “Summer Fair” Menu
Genki launches a brand new menu on the 1st of every month. This season’s “Summer Fair” menu will be released in phases, featuring 14 items from $12, bringing you a refreshing lineup of midsummer flavours.
Genki Sushi is launching the brand new “Summer Delights” series on the first day of June:
• Japanese Red Seabream with Yuzu Salt Sushi ($16): Carefully selected Japanese red seabream from Uwajima, Ehime, raised on a diet enriched with mikan peel for a delicate citrus aroma. Prepared using the traditional Japanese “Yubiki” technique to enhance the rich flavour of the skin while keeping the texture tender and refreshing. A perfect appetiser for summer.
• Jumbo Kabayaki Eel Sushi ($17): Featuring extra-thick cuts of eel with double the portion size, rich in flavour and natural fat. Finished with our special kabayaki sauce and lightly seared for a crispy exterior and tender centre, delivering a deeply satisfying taste.
• Splendid Slow Cook Beef Sushi ($19): Layers of slow-cooked and grilled marbled beef stacked generously for a juicy and tender bite. Wrapped with seaweed and paired with shredded onion and honey mustard sauce, creating a rich texture reminiscent of a gourmet rice burger.
• Scallop with Grilled Green Onion Sauce Sushi ($18): Thick and succulent Hokkaido scallops bursting with natural sweetness. Enhanced with savoury green onion sauce and onion for a refreshing finish that highlights the scallops’ delicate umami.
• Steamed Scallop with Lemon Salt Gunkan ($15/2 pcs): Tender steamed scallops paired with a specially crafted lemon salt sauce for a bright and refreshing citrus flavour. Light yet flavourful, bringing out the natural sweetness of the scallops.
• Pen Shell with Salt and Green Lemon Sushi ($14/2 pcs): Fresh pen shell lightly seasoned with sea salt and green lemon. Refreshingly appetising with a clean and natural summer flavour.
• Grilled Tarako with Cooked Salmon Salad Gunkan ($14/2 pcs): Made with richly savoury Hokkaido tarako and creamy cooked salmon salad. The combination of fish oil aroma and seafood umami creates a rich yet balanced flavour.
• Mantis Shrimp Tempura with Crispy Garlic Hand Roll ($19): Whole mantis shrimp tempura fried until crispy outside and tender inside, offering delicate sweetness and a satisfying bite. Finished with crispy garlic and fried onion strips for layers of aroma and texture.
• Seared Blackthroat Seaperch with Crispy Fried Leeks Sushi ($12): Blackthroat seaperch, often referred to as the “toro of white fish”, is prized for its rich fat content and aroma. Lightly seared and paired with sea salt and crispy fried leeks for added depth of flavour.
Starting from 15 June, the following “Summer Delights” items will also be introduced:
• Jumbo Red Shrimp Sushi ($16, original price $17): Deep-sea red shrimp with firm, bouncy texture and pronounced sweetness. Served in a portion 1.5 times larger than the regular menu item for an even richer seafood experience.
• Splendid Snow Crab Hand Roll ($28): Generously filled with snow crab meat and topped with salmon roe and yuzu vinegar. Layered seafood flavours combined with refreshing citrus notes create a luxurious and appetising bite.
• Jumbo Whelk Sushi ($20): Thick-cut whelk slices served in double portions for an extra crunchy and satisfying texture. Packed with intensified ocean flavour in every bite.
Two seasonal dishes are also available for a limited time:• Cold Noodles with Yuzu Sauce ($28) features a refreshing yuzu vinegar sauce made with Japanese yuzu juice and kombu, paired with chewy cold noodles and fresh lime slices for a light and cooling summer dish.
• Minced Chicken Skewer with Beef Tongue & Cheese ($17) combines juicy beef tongue pieces with crunchy chicken cartilage, finished with rich melted cheese for layers of savoury flavour and texture.
